Vast wind-swept limestone plateaux with deep gorges (Tarn, Jonte, Dourbie) and dry-stone villages, the Grands Causses are a mineral and pastoral space. Dogs on leads love these open expanses with their mineral scents, but the lead is imperative on the causses frequented by Roquefort sheep flocks.
